I took a class in high school called “On Your Own.” We learned how to buy a car, look for apartments – and my favorite – make meals for yourself.
That’s what every college freshman needs to know, right? We learned how to make a breakfast, lunch and dinner dish and my favorite by far was the knockoff of McDonald’s Egg McMuffin.
After living in Irwin Hall for a semester, I’ve become a self-proclaimed master chef. I’m not talking about your typical cereal, macaroni and cheese or heated up pizza from the night before. You learn to make all sorts of things when all you have is a mini-fridge and a microwave.
The McMuffin is by far my favorite, though. It’s so easy to make, the ingredients aren’t expensive and it makes for a hearty breakfast, which is the most important meal of the day. It’s also pretty healthy.
Start by cracking the eggs into a bowl, scramble away and pop them in the microwave. If you feel the need to spice it up a bitt, add in some ham, shredded cheese and/or assorted veggies.
Make sure you cover the bowl with a paper towel or you’ll have a microwave full of eggs. After about one minute, your eggs are scrambled, and you’re ready for the next step.
Now you can choose a number of different things for the base of your sandwich: a bagel, an English muffin or a couple of slices of bread all are good choices, but my favorite is the English muffin. It really makes you feel like you are getting the original McDonald's taste without spending the extra cash. <br/>&#160;&#160; Add the eggs to your choice of carbs, maybe a slice of cheese to top it off and you are good to go. Whoever said college students live off of ramen noodles is totally wrong. There are lots of quick easy snacks you can make in the dorm. All it takes is the mini-fridge and a microwave. The knockoff Egg McMuffin is cheap, easy to make and good on the go.

Instructions
Mix two cracked eggs, assorted veggies and cheese (optional) into a bowl and place in the microwave with a paper towl on top. Heat for one minute. Remove bowl from microwave and place eggs on bread of choice.
