There are so many different ways you can make popcorn delicious. Whether it's simply popped in the microwave and topped with butter and salt, or stirred into Chex Mix, you can't go wrong. Like I said in my previous entry, it's time to start making fall treats! Well, I was home again this weekend and was trying to decide what I should bake. My mom mentioned she had a giant bag of popcorn that she had bought and needed to use up. So, I decided on caramel popcorn, a perfect fall treat. Ingredients:
- 7 quarts plain popped popcorn (I used buttered)
- 2 cups brown sugar
- 1/2 cup light corn syrup
- 1 teaspoon salt
- 1 cup margarine
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
The warm, gooey caramel made the buttery popcorn chewy and delicious right after the mixture was poured over the top. With time, the caramel hardens, but it still makes for the perfect crunch!
