While the title of this entry may be deceiving, I did not make pumpkin flavored sugar cookies. Although it does sound pretty good, I made simple sugar cookies frosted as pumpkins. The sugar cookie recipe I used is one that has been in the family for a long time, and is an all-time favorite. Here it is:
Ingredients
- 1 c butter, softened
- 1 1/2 c powdered sugar
- 1 egg
- 1 t vanilla
- 1/2 t almond extract
- 2 1/2 c flour
- 1 t baking soda
- 1 t cream of tartar
Instructions
1. Mix thoroughly butter, powdered sugar, egg, vanilla, and almond extract
2. Blend in flour, soda and cream of tartar
3. Cover; chill 2 to 3 hours. (I chill overnight)
4. Heat oven to 375.
5. Divide dough in half.
6. Roll each half 3/16 inch thick on lightly floured cloth covered board.
7. Cut into desired shapes. Place on lightly greased baking sheet.
8. Bake 7 to 8 minutes or until light brown on edge.
Vanilla Butter Frosting Ingredients
- . 1/3 c soft butter
- . 3 cups powdered sugar
- 1 1/2 t vanilla
- about 2 T milk
Frosting Instructions
1. Blend butter and sugar.
2. Stir in vanilla and milk; beat until frosting is smooth and of spreading consistency.
After the cookies were done baking and I stirred up the frosting, I added red and yellow food coloring (to make orange) to the frosting so I could frost them as pumpkins. I also took a little out and added green food coloring to add a stem. I decided to get a little more creative than simply spreading the frosting on with a knife, and filled ziplock bags with the frosting and cut a hole in the corner. I then squeezed the frosting onto the cookies in a zig-zag pattern and added a stem on top. I had been wanting to try this frosting technique, so now that I have the hang of it, maybe my next project will be frosting cupcakes this way!
